Rainy/ sick days

Ughh don't you hate waking up sick or with a sore throat and you know you have a lot to do?
Well thats what I'n currently dealing with right now. 
Well this is lunch for today to help pick me up and give me energy to start my day.
I have  lentil soup, grill cheese sandwich and a almond cranberry spinach salad.

Chicken Diablo


Here is a new recipe I made up from everything I could find in my fridge. 
Left over chicken is one of the best things you can have in your kitchen it's so versatile and can be made into anything and incorporated into any recipe.
Today I have my newest recipe inspired by Chef Micheal Simon, it's called chicken diablo.
I took leftover chicken added some veggies (anything in your fridge) and a sauce of you choice I used a bit of tomato paste and seasoning.
It's very versatile and can be curved to the taste you like.

Eggplant Parmigiana

My first attempt at creating this delicious dinner. I saw the recipe on "The Chew" and I had to try it out. It's a simple recipe and easy to execute. Once you have assembled all the ingredients and soften the eggplant in a pan just slip it in the oven for 20 mins and go about your day. Very delicious and fast, definitely going to make this for dinner again.

Spinach and Ham Omelet

I love to start my day with a good breakfast. Usually I'm out of the house by 8am, but if I can wake up and make something I will. This has been one of my favourite breakfasts lately. Ever since I saw how Chef Micheal Simon made a simple feta & spinach omelet I've been hooked. 

This is really simple and easy to make and the best part is it only takes one pan and you can easy leave it on the stove top on low and start packing your bags for the day with out having to check it or flip it.
 What I do:
 1.beat two eggs, season how you like
2.add it to a hot pan
3. pull the edges in to the center so the runny egg can go to the pan and cook
4. add what ingredients you like to one side of the egg ( I chose baby spinach leaves, green onions, havarti cheese and ham slices)
5. fold egg and keep on low
6. EAT!

The tomatoes I learnt from my Italian friends Nonna (technically my nonna too!). She cuts the tomato in half, drizzle olive oil over, some chopped basil and garlic and there you have it. Pretty simple and soooooo delicious.

Feta watermelon salad


Its been a scorcher in Toronto as we have been going through a heat wave with weather that feels like 40 degrees for the past 3 days. 
The best part it's time for shorts and pool its officially SUMMER!  
So to help deal with the heat i made this feta watermelon salad (watermelons are my all time fav fruit especially for summer!) in this salad all i have is green onions, mint, red vinegar, watermelon and feta cheese. The watermelon is the sweet and juice of the salad, the cheese adds the salt and the mint and onions finish it off. Its a wonderfully mix of flavours, i didn't know how this would taste but it really taste good and i usually am not one to have fruits in a salad. This is a healthy choose if your ever craving sweets and not only that its refreshing as well.
